Ippin's own take on the classic soba noodle, blending organic buckwheat flour with wheat flour for a pale grey strand speckled with buckwheat husk. A nutty, wholesome bite suited to soups, stir-fries or chilled noodle dishes.

Cook the Soba for (1.5 mins = 1.4 mm) in boiling water and then blanch the ramen in cold water for a better texture before dishing it in soups or stir frying.
